A Delicious Taste of Hong Kong: How to Make the Perfect Hong Kong Milk Tea Recipe!

For those who haven’t had the pleasure of trying Hong Kong milk tea, it’s a strongly brewed black tea with either evaporated or sweetened condensed milk. The drink can be served hot or iced, and is known for its unique brewing method – the tea is repeatedly poured and strained through a cloth tea bag. This results in a drink with a good amount of caffeine and a smooth mouth feel. Many people who’ve tried it think it offers the perfect combination of tea and milk. If you’re looking to try something new and delicious, Hong Kong milk tea is worth a try!

It is also known as “pantyhose tea” or “silk stocking tea” because it is often brewed in a large tea sock that resembles a pantyhose.

Hong Kong Milk Tea Recipe:

Ingredients required:

  • 6 cups of hot water
  • 10 tablespoons of Ceylon Black Tea.
  • 1⅓ cups evaporated milk (315 ml, ⅓ cup per serving)
  • One to two tablespoons of sweetened condensed milk
  • A strainer lined with a piece of fine cheesecloth

Step 1: Pour hot water into the tea grounds, cover the lid, and leave the tea to steep for 10 minutes. If the tea isn’t strong enough, simmer the tea on low heat.

Step 2: Pour the brewed tea through the strainer lined with a piece of fine cheesecloth. This is what makes the drink so unique. In another saucepan, place the strainer lined with a piece of fine cheesecloth and tea grounds and strain again the brewed tea over the tea grounds. Repeat this process at least three more times.

Step 3: After flushing the tea four times, the temperature of the tea will have inevitably dropped. Re-warm the tea to 90’C.

Step 4: Stir in the sweetened condensed milk to taste. Return to the heat.

Step 5: Add 1/3 cup of evaporated milk to a 5oz cup, and pour the brewed tea over the milk. Aim for about 40% milk to 60% tea.

Step 6: Remove from heat once it has thickened. Mix thoroughly, and serve immediately.

Note:

  • To make this ahead of time, you can chill the milk-tea mixture in the fridge overnight so you can enjoy it for breakfast.
  • Don’t wait too long to stir in the condensed milk. The condensed milk melts into the tea better when it’s hot.

How to enjoy the tea?

Hong Kong milk tea is traditionally served warm or chilled with a slice of toast or wheat crackers, and butter spread generously on the inside. The Hongkongers also eat it alongside dim sum. The best Dim sum options to eat alongside the drink include egg tarts and a polo bun. It is also the base for boba drinks, and you can add tapioca pearls to enhance the tea’s sweetness.
